Slow Cooker Pumpkin Beef Stew

Ingredients

  • 1 Tbsp. Olive Oil
  • 3 lbs. Beef Chuck Roast, cut into 2” pieces
  • 1/2 cup That’s Smart! All-Purpose Flour
  • 1 tsp. That’s Smart! Garlic Powder
  • 1 tsp. That’s Smart! Onion Powder
  • 1/2 tsp. That’s Smart! Paprika
  • 1/2 tsp. Salt
  • Freshly Ground Pepper, to taste
  • 3 cups That’s Smart! Frozen Mixed Vegetables
  • 4 cups That’s Smart! Beef Broth
  • 1 can (15 oz.) can Pumpkin Puree
  • Chopped Fresh Parsley, for garnish

Method

  1. Heat the olive oil in a large skillet over medium-high heat. Dredge the beef in the flour. Working in batches, brown the beef on all sides and transfer to the slow cooker.
  2. Add the garlic powder, onion powder, paprika, salt, pepper, mixed vegetables, beef broth, and pumpkin puree to the slow cooker. Mix to combine.
  3. Cook on low for 8-10 hours or on high for 5-6 hours.
  4. Garnish with chopped parsley before serving.
