Muffin-Tin Mini Meatloaves

Ingredients
- 2 lbs. That’s Smart! Ground Beef, Chicken, or Turkey
- 1 pkg. (6 oz.) Stuffing Mix
- 2 That’s Smart! Eggs, lightly beaten
- 1 cup That’s Smart! Ketchup, divided
- 1/3 cup That’s Smart! Original Barbecue Sauce
- 2 Tbsp. Dijon Mustard
Method
- Preheat oven to 350℉. Add ground beef, stuffing mix, eggs, 1/2 cup ketchup, 1 tablespoon mustard, and 1/2 cup water to a large bowl and mix until combined. Divide meat mixture between the 12 muffin cups, pressing down to fill each cup.
- In a bowl, combine the remaining ketchup, mustard, and barbecue sauce. Top each muffin with sauce and bake for 25-30 minutes or until the internal temperature reaches 160℉.
- Serve mini meatloaves with mashed potatoes or a side salad if desired.
